Hot Breakfast Recipe


We are cereal people. Not only because it's easy, but also because I have a very hard time finding new breakfast recipes that my son can actually eat. It's not because he's a picky eater. No. He'll eat practically anything I give him. It's because he has food allergies. He's allergic to Dairy, Eggs and Peanuts. I know. It sucks!

Breakfast for me is the hardest meal to plan for him. Most recipes call for eggs or milk, which can be worked around- he can have soy in place of milk and there's a product called egg replacer that works good for baking type recipes (like muffins.) Only trouble is that soy definitely has it's own distinct taste, it's a little hard to get use to (mainly for Chris and I - the kids don't even notice!)

We usually have cereal, or oatmeal. Sometimes I'll make soy waffles, or pancakes with soy milk and egg replacer, but most days we rely on cereal.

So, I'm attempting to follow the Hot Breakfast Challenge. Let me just say, this is a VERY big challenge for me! We've had oatmeal, but we've also cheated and had cereal today. I need some new recipes! I'm hoping to find some that I can adapt to work for our family. Because, cereal and oatmeal are getting a little boring around here!

Today I'm posting my grandma's Banana Muffin recipe. They are SO yummy and freeze really well. Although, they usually don't last long enough around here to freeze :)

Grandma's Banana Muffins


3 large bananas
3/4 cup white sugar
1 egg ( or egg replacer in my case!)
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 1/2 cup all purpose flour
1/3 cup melted butter ( or non-dairy margarine in my case!)

Mash bananas. Add sugar and slightly beaten egg.
Add melted butter.
Add dry ingredients and bake
375* for 20 mins.

  1. Have you tried applesauce in place of the eggs? I know it sounds odd but it keeps muffins and breads nice and moist. I've only done it a few times, as it's when I run out of eggs at the last moment. I don't know where I saw the tip first, but I've been doing it for years. Baby applesauce really works best, but I rarely have that in the house. And the baby stuff doesn't add as much taste.

    Good luck. If you guys like grits, I have a crock pot recipe up. (Although, grits on the stove are fast too!)
