Porcupine Recipe

Today is Tuesday.

What does this mean?

Boys Night.

Every Tuesday night Chris gets together with a few of his buddies to hang out. He stays at the office and usually I'm fast asleep by the time he gets home.
In the past, sadly, I would simply pick up McDonalds for the kids and I for dinner. I really couldn't be bothered with making a big meal just for us. Well, I'm attempting to change that. I'm trying really hard to get healthy and eating McDonalds isn't really helping out much.

So in light of that, tonight I'm making Beef Porcupines. I planned this for two reasons:

#1. My kids absolutely love them! They both quickly devour them- usually without so much as a peep! (This is one recipe that I think they would happily eat every night.)

#2. Chris won't be home for dinner. This recipe is not on the top of Chris' all time favorite meals and so I usually try and save it for a night when he won't be home for dinner.

As for me- I'm with the kids on this one. I love porcupines!
This meal reminds me of my Dad. Growing up, this was one of his signature dishes. Whenever I make it I am reminded of him and how much he truly sacrificed for us. *Smile* I can picture in my head how proud he'd look pulling out a yummy homemade meal from the oven :)
He really did try so hard to provide a safe & healthy home for us to grow up in.

I thought I'd share our cooking with you today :)
So without further adu here they are:
My Dad's Porcupines!

Now- here are the ingredients:


Ground beef, chopped onion, salt, pepper, long grain rice, condensed cream of tomato soup & water.

In a medium sized bowl, mix meat, onion, salt, pepper and rice together well.



Shape into 12 meatballs. Arrange evenly in square baking dish.
Combine soup and water.


Pour over meatballs.


Cover. Bake in 350* oven for 1 hour or until rice is cooked.


I served them with vegs, french bread and salad.
Yummy!

Porcupines

1 lb ground beef
¼ cup chopped onion

10 oz soup can of water

Serves 4.

    Also, I really understand your desire and struggle to get up early. I have a one year old and would love to be one of those people that gets up before their kids. Get a jumpstart on the day. I suppose there's always tomorrow...
