Chili Recipe

Have I got a recipe for you! It's so easy and the whole family loves it. I made this the other night to use up some ground beef I had in the freezer.

So, here are the ingredients. Just pretend that you see a package of ground beef and some white sugar....I forgot to put them in the picture- Oops!

First, you'll need to brown the ground beef.


While that's happening, go ahead and cut up the green pepper and onion and then put them into your crock pot all mixed up.


Ok, now mix all the rest of the ingredients in a large bowl.



Add the ground beef:


Voila! That's it! After just a few hours of cooking you have a yummy meal. (Don't forget to stir it up at the end to mix in the green pepper and onion!)

It's great on it's own. I serve it with french bread and a salad. Sometimes though when I'm feeling especially crazy, and want something with a little more kick I'll use this recipe to make:

Chili Nachos

So, you can pretty much use whatever topping you like. We use green and red peppers and green onions.


And lots of yummy cheese!

Mmmmmmm.....

Ok, so now you just put it all together.
Layer some nacho chips, and spread your chili on top. (I only use about half the recipe, so you can freeze the leftovers, or have chili one night and use the leftovers to make these nachos- whatever tickles your fancy!)

Now add all the toppings. ( I always leave a corner with no cheese for my son who has an allergy to dairy- in case you were wondering why in the world wouldn't I cover the whole thing in cheese!?)

After a few minutes on broil you have a yummy (not totally healthy-but very tasty) meal!

Chili

1 lb lean ground beef
1 cup chopped onion
1 green pepper
14 oz canned kidney beans, with liquid
10 oz canned sliced mushrooms, drained
10 oz condensed tomato soup
1 tsp chili powder
1/4 tsp seasoning salt
1 tsp granulated sugar
1/2 tsp salt
1/8 tsp pepper

Scramble-fry ground beef in a non-stick frying pan until browned. Drain well.

Place onion and green pepper in bottom of 3 1/2 (3.5L) slow cooker.

Combine remaining 8 ingredients in bowl. Stir well. Add ground beef. Stir. Add to slow cooker. Cover. Cook on low for 6-7 hours or on high for 3- 3 1/2 hours. Stir before serving. Makes 5 1/2 cups.
