Yummy Find

I am always on the lookout for recipes that our whole family can enjoy, especially baking ones.
I struggle because of our son's allergies.
So, when I stumbled across this no egg, no dairy, no nuts cookie recipe I was so excited! I have to tell you, most recipes that I've found that omit these ingredients are usually, well, not that good.
Friends, I'm happy to report that these babys are SO good. Crunchy on the outside an chewy on the inside. Yum- Yum!

Even if you don't have allergies in your home, I'm telling you these cookies are worth making....unless you have a problem with will power in which case you probably shouldn't make them because you'll end up eating the whole batch yourself- they are that good! :)


Poor Man's Cookies:

(from Frugal Antics of a Harried Homemaker)

2 cups rolled oats
1 cup packed brown sugar
1/2 cup sugar
1 cup flour
1/4 tsp salt
1 tsp baking soda
1/4 cup hot water
1/2 cup shortening, melted and cooled
1 tsp vanilla

In a mixing bowl, combine oats, sugars, flour and salt.
Combine soda and water; stir into oats along with shortening and vanilla.
Roll into walnut sized balls. Place on greased cookie sheets.
Bake at 350 degrees for about 10 minutes or until golden brown.
Remove from the over; allow to stand 2 minutes before removing to a wire rack to cool.

(I substitute dairy-free margarine for the shortening (because that's what I had here) and they turned out perfect!)
