Menu Plan Feb 9- 15


I've said before how I haven't always loved being in the kitchen. The cooking part I didn't so much mind. No, it was the 'trying to decide what to make' that I dreaded.
I couldn't for the life of me decide what to make. I'd put off the decision all the way until we were all starving and then we'd end up eating out! It got to the point where neither of us could stomach another fast-food meal. YUCK!

It was either change things up in my kitchen or stop eating all together :) So, I was more than excited to find this post over at Rocks in My Dryer.

Inspiration just took over and I decided it was high time I went through my own cookbooks and made my own recipe book. I excitedly began the task of going through all my cookbooks and finding and copying all the recipes that our family enjoys.

I had a lot of fun doing it. I love organization and was super hopeful for what this recipe book would mean for my decision making headaches!

I'm happy to report these results:
  1. I cook a homemade meal just about every night
  2. I plan a weekly menu so easily by simply picking 7 of the recipes in the book
  3. We spend waaaaay less money on food. ( in case you didn't know - fast food is super expensive people!)
  4. We're eating healthy
  5. and most importantly.........I'm actually having fun cooking :)
I love finding new recipes and adding them to the bunch. Thanks to Org Junkie, I've been adding new ones every week!

(For all you ladies who are considering Org Junkie's challenge to purge those recipe books I say- DO IT! Copy out your favorite recipes from each book and make your own! You'll be so happy to have one place to go to find them all!)

Ok, so here's what's happening in my kitchen this week:

Monday: Steak Stir-fry
Tuesday: Macaroni casserole
Wednesday: Roasted Sticky Chicken
Thursday: Chicken Quesadillas (I had this one on my menu plan last week and didn't make it. I'm planning on using the leftover chicken from the night before.)
Friday: Pizza night at my dad's
Saturday: Asian Noodle Salad (with chicken)
Sunday: Steak and Potatoes

    The Macaroni Casserole is super easy. I just brown ground beef, add spaghetti sauce and whatever vegs you choose (I use red and green peppers, celery, onion)

    Then I add the spices- chili powder, garlic powder, Italian seasoning, salt, pepper.

    Mix all this with some cooked noodles in a casserole dish.

    Cover with cheese and bake in the oven for just a few minutes until the cheese is melted.

    Yum! My kids love it!

  4. We love chicken quesadillas at our house. We eat them for lunch and dinner, now only if I could work them into breakfast!
