Kid's Sugar Cookies aka. Daddy's weakness

Yesterday I found the cutest set of cookie cutters in the clearance bin at Superstore.
So, today I decided to put them to good use :)

I love making sugar cookies, because of all the sweets I make these are the ones I KNOW will be devoured by my husband. They are his weakness. Hey, a little treat once and awhile, ain't gonna hurt him. Right?

My big girl and I had ourselves a very fun morning of baking (making a HUGE mess) and tasting (of course!)
But boy o' boy, let me tell ya, did she ever crash at nap time from her morning sugar high!


Kid's Sugar Cookies


1 cup margarine
2 cups sugar
2 eggs
1 tsp vanilla

3 1/2 cups flour
4 tsp baking powder
1/8 tsp salt

Cream butter and sugar. Beat in eggs one at a time. Beat in vanilla.
In a separate bowl mix together flour, baking powder and salt. Add dry mixture to creamed mixture. Mix together by hand.

Roll dough into ball cover with saran wrap and chill for 1 hour.

Roll out dough and use cookie cutters to make into fun shapes.

Bake at 350* for 10 mins.
(can sprinkle with cinnamon when hot)
OR
Cool and top with icing (I like to use royal icing because it hardens), and I'm a big fan of sprinkles too!



Royal Icing


3 large egg whites
2 tsp fresh lemon juice
5 cups icing sugar

In a large bowl beat egg whites with the lemon juice until they become fluffy (about 5 mins). Add
the icing sugar slowly, beating at a low speed until it is all combined and smooth.
Use food coloring to make desired icing colors.

** This icing needs to be used right away or transferred to an airtight container as it will harden as it is exposed to air.**

  2. Well won't these cookies be a sweet surprise for your husband! Cute cookie cutters, too. Isn't it fun, snagging a find like that in the bargain bin?

    Thanks for stopping by my blog, too, by the way. You'd asked if you can get Queen of the Castle in bookstores in Canada. The stores should be able to order them. I know Barnes & Noble and Borders can get them easily. Do you have those stores where you are? Anyway, thanks for asking :) And happy cookie eating (the best part).
