Menu Plan May 25- May 31
First things first.
Last week's winning recipe.... Parmesan Cheesy Chicken
SO yummy! I freely admit though that I totally messed up this recipe. After putting it in the oven I quickly became distracted by the kids (can't remember the crisis, but it was mighty important for mama to intervene) when I returned to the kitchen to start cleaning up I noticed the bread crumbs sitting unopened on the countertop.
Whoops! I completely forgot one of the KEY ingredients. No matter. I quickly pulled the chicken from the oven and slathered it with bread crumbs. I think it had only been in the oven 20 minutes or so. The result? Perfection. I'm sure it would have turned out great, if I had actually followed the recipe properly, but I think I'll make it this way again the next time too, it just came out all crispy and yummy on the outside with a cheesy layer underneath! Mmmmm.
This week we will be celebrating our baby's 1st birthday, and having a special birthday dinner for her. Wow, I can't believe my baby is already a year!
All weekend I've been reminiscing about the days leading up to her birth. Just this morning I was thinking: 'This time last year I was contracting every few minutes in the hospital, being told there are no beds and consequently being sent home on morphine with a promised induction in a couple days'....ahh the memories :)
Ok, now onto this week's plan:
Monday: Chicken Bacon Burgers
Tuesday: Our baby girl's 1st BiRThDaY!! (not sure yet what I'll make, but it'll be something on the BBQ) I'm also planning on making a pretty butterfly cake :)
Wednesday: Breakfast for dinner- ham and cheese omelets, bacon, toast, hashbrowns- YUM
Thursday: Pepper cheesesteak sandwich ( Yes, honey- this one's for you!)
Friday: No cooking!! (Chris and I are at a rehearsal dinner for my friend's wedding.)
Saturday: No cooking again! We will be at the Wedding!
Sunday: Spaghetti
